Pulled Pork, Cabbage and Arugula Salad

Pulled pork, cabbage and arugula salad is made from, you guessed it, pulled pork, cabbage and arugula along with shredded carrot, cilantro and sliced almonds. This hearty and filling salad is drizzled with a tangy and spicy Citrus Lime Vinaigrette for an extra kick of flavor.
Pulled Pork, Cabbage and Arugula Salad
The impetus for this salad was me trying to get creative with what to do with my leftover slow cooker pulled pork. Most people make sandwiches with pulled pork, but I wanted a healthier, more nutrient-dense option.
I’d already whipped my Spicy Pulled Pork Fried Eggs for breakfast (so yum!) but wanted a recipe appropriate for lunch and dinner.
With cabbage, arugula and carrots in my fridge, this salad virtually made itself and came together quickly, just by way of my Winter Meal Prep leftovers. All I had to do was whisk together the Citrus Lime Vinaigrette and chop up some fresh herbs. So easy!
A Hearty and Filling Salad Recipe
The great thing about this salad is that it’s hearty and filling. It’s perfect those cold winter months when you’re using your slow cooker more often and you can use warm or cold pulled pork in this recipe.
Cabbage is a great winter vegetable and strong enough to hold up to all the flavors from the marinated pulled pork and spicy Citrus Lime Vinaigrette. Bonus – the heartiness and durability of the ingredients in this salad mean you can make it ahead of time and it won’t wilt down too much.
In fact, I think this salad recipe is one that gets even better after it’s had time to sit. The jalapeno, lime and cilantro from the vinaigrette meld beautifully with all the other ingredients. It’s tasty, flavorful, filling and an all-around great main course salad recipe. Enjoy!

Ingredients
- 4 cups pulled pork
- 3 cups sliced red cabbage
- 1 cup baby arugula
- 1 medium carrot, grated
- 1 small bunch cilantro, chopped
- 1/3 cup sliced almonds
- 1 recipe Citrus Lime Vinaigrette
Instructions
- Add all of the ingredients to a mixing bowl, drizzle with the Citrus Lime Vinaigrette and stir together.

Is the pulled pork to be hot, warm or cold? i’m guessing the veggies are all raw and cold.
It’ll taste better if the pulled pork is warmed up before tossing it into the salad.
Made this today and it was so delicious I went back for seconds! The little bite of the serrano chili (I used instead of jalapeno) in the dressing was perfect. It was all simply delicious. That salad would be good for vegetarians too I think. Just throw in some black beans instead of the pork? Thanks for sharing this goodness with us. Muy rico!

Such an easy, delicious and versatile dish. And I love the crunch of the almonds. Since the pulled pork is meal prepped, this salad is done under 10 minutes. Just how I love it ;-)

This was a really hearty, crunchy salad that hit the spot! I added green onions since I had them on hand and think it complemented nicely! Loved this as a way to use the pulled pork I made that was really veggie focused.

I used pine nuts instead of almonds, because that’s what I had at home and it was delicious!

Hi Barbara – Unfortunately I don’t and this recipe was written specifically for the slow cooker. But I’m sure you can find alternative recipes online. :)
