I am of mediterranean descent. I got a lot more creative with my spices and added za’atar and some greek season in place of the plain oregano since it already contains it. And I added a touch a aleppo pepper for a little heat. Served it with rice, tzatziki, and pita for those of us not gluten free. I also roasted the tomatoes and peppers to get more of a “blister”.3 stars
