Coconut macaroons are delicious little mounds of goodness. They’re the perfect sweet snack (assuming you can stop at one or two)…and they’re surprisingly simple to make.

The great thing about coconut macaroons is that they couldn’t be easier to make. Once you’ve made them once, you’ll soon realize how highly addictive they are. I personally love the bright, lemony, vibrant sweetness of these Meyer lemon ones…which are sweet without being too sweet. You know what I’m talking about, right? Either way, you can’t go wrong. And I find these Meyer lemon coconut macaroons span all seasons to be appropriate (and delicious) year round.

Meyer Lemon Coconut Macaroons

Ingredients 
 

Instructions 

  • Mix all ingredients in a bowl until well combined.
  • Using a 1.5 tbsp cookie scoop, scoop the mixture onto a baking sheet lined with parchment paper.
  • Bake at 325 degrees F for approximately 20 minutes, turning the baking sheet halfway through The bottom of each macaroon will start to brown with finished.
  • Cool macaroons on the baking sheet for at least 15 minutes before transferring to a plate (otherwise, they will break apart).

  1. I doubled the recipe, used one lemon and one lime. They turned out amazing! I would like to know if these should be stored in the fridge?

    1. Hi Yesenia – Homemade coconut macaroons can last up to one week in the fridge. But to prevent them from getting too soggy, just leave them on a plate in the fridge.

  2. Could I use maple syrup instead of honey? If so, will it be the same amount?

  3. I’ve done everything according to the recipe except didn’t have meyer lemons, so i used 1,5 medium size limes. While baking all the balls melted and turned into one big cookie…Lisa, what could be a reason for it? Can the type of almond flower be a game changer? Or all credit goes to lemons?:)

    1. That sounds strange, these should melt as the shredded coconut and almond flour gives them structure. I would double check your quantity on the shredded coconut and almond flour. :)

  4. I love these macaroons! This is the 4th or 5th time i have prepped them in order to have a quick and healthy sweet treat whenever i feel like eating snacks :).

    I have a question about the calorie count: you wrote that this recipe has 146 kcal but for how many grams / servings does that count?

    1. Glad you enjoyed these coconut macaroons Merve! In terms of the servings, you can always find it in the recipe card, which is 12 macaroons! And the nutritional information is per serving (1 macaroon).

  5. These taste great, everyone in my family loved them! I do have one question though. I’ve made these twice so far, and they keep “leaking” on me, so that it looks like a ball sitting a puddle. What kind of honey do you use? Liquid? Thicker? Not sure what else it could be.5 stars

    1. Hi Emmelia – so glad you love the macaroons! And that’s interesting about the puddle as I’ve never had that happen. I do use a thicker white honey. Maybe give that a try next time or add a little less of the honey that you’re currently using. :)
