I’ve made the cauliflower rice 3 times now, loved it. Last time it turned out like mashed potatoes and I think I did everything the same. What did I do??

In your recipe, you say that one head of cauliflower is one serving. Can you say how much (say in cups) one head of cauliflower actually yields? I suppose it would depend on the size of the head. Where I live, grocery prices have skyrocketed so much, a head of cauliflower costs $5.99 (on sales sometimes for $3.49).
