However, I just made another batch and it isn’t as creamy as last time. Should I have roasted the almonds for longer? I roasted them for 13 minutes, but what should they look like when they’re done? I was worried i had over roasted them. Then the process after 10 minutes all i was getting was fine ground nuts.
So i resorted to adding oil reluctantly. Only to find the 2 to 3 tablespoons of oil is actually more than 1\2 cup of oil.
The only thing you got right was about the heat genrated making the butter. Unfortunately mine did not come anything close to what your recipe said.
Guess the almonds of the Mediterraneam must be very different. Maybe you need to give some indication of weight for the load and not just 4 cups or more.
Failed miserably with this.

And it was a complete success. I have tried 4 times to make almond butter with different recipes, on different sites, and have failed miserably. I have blended, in my vitamix I should add, for over 20 minuted and still not gotten almond butter. I found this recipe and it was different – 4 cups, nothing less, roasted only, and the brand of almonds I think really made a difference as well. My brand was a good brand, but maybe that was one of my obstacles? Who knows really.
I am thrilled to have finally, finally have made drippy almond butter. YAY! And it took less than a minute 😊

The key – follow the recipe EXACTLY and use this brand of almonds, please. And go ahead and add the oil first, what the heck (My opinion, it worked)5 stars

This was really so easy to make and it tastes fabulous!!! I took whatever time needed roasting the almonds as I didn’t want to add oil.
