Spicy Pulled Pork Fried Eggs

Spicy pulled pork fried eggs are a great way to jazz up your breakfast routine. If you love a little heat and spice, you’ll love the combination of hot sauce and jalapeños alongside runny eggs and flavorful pulled pork.
This is a protein-packed, low-carb, keto, paleo and Whole30 breakfast recipe that’s anything but boring!
Spicy Pulled Pork Fried Eggs
After making my last batch of slow cooker pulled pork I had quite a bit of leftover pulled pork. I’d already made my pulled pork tacos and pulled pork, cabbage and arugula salad (both are amazing by the way), but wanted something creative for a healthy breakfast recipe. Thus, spicy pulled pork fried eggs.
The great thing about this recipe is that it’s naturally low-carb, keto, paleo and Whole30. It’s protein packed which keeps you full and the spicy flavors definitely jazz up your “run of the mill” breakfast routine.
Meaning, if you normally fry two eggs all on their own, this will be a welcome flavor explosion.
Tips for the Fried Eggs
I get asked all the time how I fry eggs in my stainless steel pan without them sticking. The key – fry them low and slow! I personally love fried eggs that are crispy on the edges with a runny yolk. Here’s how I do that:
- Heat the pan on low and melt your fat of choice (butter, ghee, avocado oil, etc). I personally love using bacon grease, rendered from a previous batch of cooking bacon in the oven.
- Gently crack the eggs into the fat and let them cook for 2-3 minutes.
- Add a lid for the last 30 seconds or so, to ensure the tops of the egg whites are fully cooked.
How to Assembly the Spicy Pulled Pork Fried Eggs
This breakfast recipe comes together really fast. And you want to be prepared so that you don’t accidentally over cook your fried eggs. So here’s a few tips:
- Make sure your pulled pork is on a separate plate and ready to go
- Slice your jalapeños and green onion before frying your eggs
- Once your eggs have cooked for 30 seconds, add the pulled pork and jalapeños. The heat from the pan will warm both of these items while it cooks for another two minutes or so.
- Remove the eggs to a plate, then add the green onion.
- Drizzle the pulled pork with hot sauce and sprinkle salt and pepper on top before serving.

Description
Ingredients
- 2 large eggs
- 1 tbsp bacon grease, or ghee, avocado oil or other fat
- 1/3 cup pulled pork
- jalapeno, sliced
- green onion, sliced
- dash of hot sauce
- salt and pepper
Instructions
- Heat the bacon grease in a small skillet on low heat.
- Crack the eggs into the skillet and cook for 30 seconds.
- Add the pulled pork and jalapeños and cook an additional 2 minutes or until the eggs are done to your liking.
- Transfer the eggs to a plate and top with green onion, hot sauce, salt and pepper.
